Anhui Fermented Mandarin Fish / Stinky Mandarin Fish Recipe

Main Ingredients
- 1 whole Mandarin Fish cleaned and gutted
- 2 tablespoon Fermented Bean Paste
- 1 tablespoon Soy Sauce
- 1 tablespoon Rice Wine
- 2 cloves Garlic minced
- 1 inch Ginger sliced
- 2 stalks Green Onions chopped
- 1 teaspoon Sugar
- to taste Salt
- to taste Pepper
1. Clean and gut the mandarin fish. Pat it dry.
2. Rub the fish with salt and let it sit for 10 minutes.
3. Rinse off the salt and pat the fish dry again.
4. In a bowl, mix fermented bean paste, soy sauce, rice wine, minced garlic, sliced ginger, chopped green onions, sugar, salt, and pepper.
5. Rub the mixture all over the fish and let it marinate for 20 minutes.
6. Heat a wok over medium heat and add a bit of oil. Fry the fish until both sides are golden brown.
7. Transfer the fish to a steamer and steam for 10-15 minutes until fully cooked.
8. Serve hot, garnished with extra green onions if desired.
