Chinese Chicken Vegetable Soup

Main Ingredients
- 2 cups Chicken Breast, cooked and shredded
- 1 cup Carrots, sliced
- 1 cup Celery, sliced
- 1 cup Mushrooms, sliced
- 4 cups Chicken Broth
- 2 cloves Garlic, minced
- 1 tablespoon Soy Sauce
- 1 teaspoon Ginger, grated
- to taste Salt and Pepper
1. In a large pot, heat a bit of oil over medium heat.
2. Add garlic and ginger, sauté until fragrant.
3. Add carrots, celery, and mushrooms. Cook for about 5 minutes.
4. Pour in chicken broth and bring to a boil.
5. Add shredded chicken and soy sauce. Simmer for 15-20 minutes.
6. Season with salt and pepper to taste. Serve hot.
