Chinese Dan Bin Recipe (Taiwanese Egg Crepe)

- ½ cup All-purpose flour
- ½ cup Water
- 2 Eggs
- 1 tablespoon Vegetable oil
- 1 pinch Salt
- 1 stalk Green onion, chopped
In a mixing bowl, combine flour, water, and a pinch of salt. Mix until smooth.
Heat a non-stick pan over medium heat and add a bit of oil.
Pour a thin layer of the batter into the pan, swirling to cover the bottom.
Crack an egg onto the crepe, spread it evenly, and sprinkle with chopped green onion.
Cook until the egg is set, then fold the crepe and serve hot.
