Ingredients 

Noodles

  • 3 cups All-purpose flour
  • 1 cup Water
  • 1 teaspoon Salt

Beef Broth

  • 1 lb Beef shank cut into chunks
  • 8 cups Water
  • 2 slices Ginger
  • 2 cloves Garlic smashed
  • 2 tablespoon Soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 4 stalks Green onions chopped

Instructions 

  1. Combine flour, water, and salt to make the dough. Knead until smooth. Let it rest for 30 minutes.
  2. Roll out the dough and cut into strips. Stretch each strip to form noodles.
  3. In a large pot, add beef shank, water, ginger, garlic, soy sauce, Shaoxing wine, salt, and sugar. Bring to a boil, then simmer for 2 hours.
  4. Cook the noodles in boiling water for 2-3 minutes. Drain and set aside.
  5. Serve the noodles in bowls and pour the beef broth over them. Garnish with chopped green onions.
