Ingredients

  • 4 cups chicken broth
  • 1 cup mushrooms, sliced
  • 1 cup bamboo shoots, julienned
  • 1 cup firm tofu, cubed
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 teaspoon white pepper
  • 1 teaspoon chili paste
  • 2 eggs eggs, beaten
  • 2 green onions green onions, chopped for garnish

Instructions 

  1. 1. In a pot, bring the chicken broth to a boil.
  2. 2. Add mushrooms, bamboo shoots, and tofu. Simmer for 5 minutes.
  3. 3. Stir in soy sauce, rice vinegar, white pepper, and chili paste.
  4. 4. Add the cornstarch mixture and stir until the soup thickens.
  5. 5. Slowly pour in the beaten eggs while stirring the soup.
  6. 6. Garnish with chopped green onions and serve hot.
