Ingredients

  • 200 g egg noodles
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 2 spring onions, chopped
  • 2 tablespoon sesame seeds, toasted
  • 2 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon chili oil
  • 1 teaspoon sugar
  • 1 clove garlic, minced
  • to taste Salt

Instructions 

  1. Cook the egg noodles according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine the noodles, cucumber, carrot, and spring onions.
  3. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, chili oil, sugar, and garlic.
  4. Pour the dressing over the noodle mixture and toss to combine.
  5. Sprinkle with toasted sesame seeds and season with salt to taste.
  6. Serve chilled or at room temperature.
