Chinese Stir-Fried Egg and Tomato

- 3 eggs beaten
- 2 tomatoes cut into wedges
- 1 tablespoon vegetable oil
- 1 teaspoon salt to taste
- 1 teaspoon sugar
- 1 tablespoon water
- 1 scallion chopped, for garnish
Heat the wok over medium heat and add the vegetable oil.
Add the beaten eggs and scramble until just set. Remove from wok and set aside.
Add the tomatoes to the wok and stir-fry for 2-3 minutes until they start to soften.
Season with salt and sugar, then add the water. Stir well.
Return the scrambled eggs to the wok and mix with the tomatoes. Cook for another minute.
Garnish with chopped scallions and serve hot.
