Instructions
Heat oil in a wok over medium heat.
Add beaten eggs and scramble until just set. Remove and set aside.
In the same wok, add a bit more oil if needed, then add chopped chives and stir-fry for 1-2 minutes.
Return the scrambled eggs to the wok, mix well with the chives, and season with salt to taste. Serve hot.
