Ingredients 

Main Ingredients

  • 500 g Chicken Thighs cut into bite-sized pieces
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Shaoxing Wine
  • 1 teaspoon Cornstarch
  • 1 cup Dried Red Chilies cut into 2-inch pieces
  • 2 teaspoon Sichuan Peppercorns
  • 4 cloves Garlic minced
  • 1 inch Ginger minced
  • 2 stalks Green Onions cut into 1-inch pieces
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 2 tablespoon Vegetable Oil

Instructions 

  1. 1. Marinate chicken with soy sauce, Shaoxing wine, and cornstarch for 15 minutes.
  2. 2. Heat oil in a wok over medium-high heat. Add dried chilies and Sichuan peppercorns, stir-fry until fragrant.
  3. 3. Add garlic and ginger, stir-fry for 30 seconds.
  4. 4. Add marinated chicken, stir-fry until cooked through.
  5. 5. Add green onions, sugar, and salt. Stir-fry for another 2 minutes.
  6. 6. Serve hot.
