Crossing the Bridge Noodles Recipe (Guoqiao Mixian)
A traditional Yunnan noodle dish with a rich broth, fresh ingredients, and rice noodles.

Main Ingredients
- 200 g rice noodles soaked in warm water
- 500 ml chicken broth
- 100 g chicken breast sliced thinly
- 50 g pork loin sliced thinly
- 2 pcs shiitake mushrooms sliced
- 1 pcs egg beaten
- 1 bunch spinach washed
- 2 cloves garlic minced
- 1 tablespoon ginger minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- to taste salt
- to taste pepper
1. Soak rice noodles in warm water for 20 minutes.
2. Bring chicken broth to a boil in a pot.
3. Add garlic and ginger to the broth and let it simmer for 5 minutes.
4. Add chicken breast, pork loin, and shiitake mushrooms to the broth. Cook until meat is done.
5. Add soy sauce, sesame oil, salt, and pepper to taste.
6. In a separate pot, bring water to a boil and cook soaked rice noodles for 3-4 minutes. Drain and set aside.
7. In serving bowls, place a portion of cooked rice noodles. Pour the hot broth with meat and vegetables over the noodles.
8. Add beaten egg and spinach to the bowl. The heat from the broth will cook the egg and wilt the spinach.
9. Serve immediately.
