Ingredients 

Main Ingredients

  • 2 medium potatoes peeled and cut into wedges
  • 1 large eggplant cut into chunks
  • 1 large green bell pepper cut into chunks
  • 2 cloves garlic minced
  • 2 tablespoon soy sauce
  • 1 tablespoon vinegar
  • 1 tablespoon sugar
  • 3 tablespoon vegetable oil divided

Instructions 

  1. 1. Heat 2 tablespoon of oil in a wok over medium heat. Add potatoes and stir-fry until golden and tender. Remove and set aside.
  2. 2. In the same wok, add another 1 tablespoon of oil. Add eggplant and stir-fry until soft. Remove and set aside.
  3. 3. Add garlic and green bell pepper to the wok. Stir-fry for 2 minutes.
  4. 4. Return potatoes and eggplant to the wok. Add soy sauce, vinegar, and sugar. Stir well to combine.
  5. 5. Cook for another 2-3 minutes, stirring occasionally. Serve hot.
