Hainanese Curry Rice Recipe

Main Ingredients
- 2 cups Rice Jasmine rice preferred
- 500 grams Chicken thighs Boneless, skinless
- 1 cup Coconut milk
- 2 tablespoon Curry powder
- 1 tablespoon Soy sauce
- 1 tablespoon Vegetable oil
- 1 teaspoon Salt
- 1 teaspoon Sugar
- 2 cloves Garlic Minced
- 1 inch Ginger Minced
- 1 cup Water
1. Cook the rice according to package instructions.
2. Heat oil in a pan over medium heat. Add garlic and ginger, sauté until fragrant.
3. Add chicken and cook until browned.
4. Stir in curry powder, soy sauce, salt, and sugar. Cook for another 2 minutes.
5. Pour in coconut milk and water. Bring to a boil, then simmer for 20 minutes.
6. Serve curry over cooked rice.
