Ingredients 

Crepe Batter

  • 1 cup All-purpose flour
  • ¾ cup Water
  • ¼ cup Milk
  • 1 large Egg beaten
  • ¼ teaspoon Salt

Filling

  • 4 large Eggs beaten
  • ½ cup Scallions chopped
  • ½ cup Cilantro chopped
  • 4 pieces Crispy wonton wrappers
  • 2 tablespoon Hoisin sauce
  • 2 tablespoon Chili sauce

Instructions 

  1. In a mixing bowl, whisk together flour, water, milk, beaten egg, and salt until smooth.
  2. Heat a non-stick pan over medium heat and lightly grease it.
  3. Pour a ladle of batter into the pan, swirling to create a thin crepe.
  4. Crack an egg onto the crepe, spreading it evenly. Sprinkle with scallions and cilantro.
  5. Place a crispy wonton wrapper in the center, then fold the crepe over it.
  6. Spread hoisin and chili sauce on top, then fold the crepe into a square. Serve hot.
