Old Cucumber Soup Recipe (Lao Huang Gua Tang)

Main Ingredients
- 1 large Old cucumber peeled and cut into chunks
- 200 g Pork ribs blanched
- 6 cups Water
- 2 pieces Dried scallops optional
- 6 pieces Red dates pitted
- 1 piece Dried cuttlefish optional
- 1 teaspoon Salt to taste
1. Peel and cut the old cucumber into chunks.
2. Blanch the pork ribs in boiling water for a few minutes, then drain.
3. In a pot, add water, blanched pork ribs, old cucumber chunks, dried scallops, red dates, and dried cuttlefish.
4. Bring to a boil, then reduce heat and simmer for 1 hour.
5. Season with salt to taste before serving.
