Instructions
1. Heat the wok over medium-high heat and add the vegetable oil.
2. Add the Sichuan peppercorns and dried red chilies. Stir-fry for about 30 seconds until fragrant.
3. Add the minced garlic and stir-fry for another 30 seconds.
4. Add the potato slivers and stir-fry for about 5-7 minutes until they are tender but still slightly crispy.
5. Add the soy sauce and salt, and stir-fry for another 2 minutes.
6. Serve hot as a side dish.
