Stir-fried Amaranth Recipe (Xian Cai)

Main Ingredients
- 500 g Amaranth leaves washed and chopped
- 2 cloves Garlic minced
- 1 tablespoon Vegetable oil
- 1 teaspoon Salt or to taste
Heat the wok over medium-high heat and add the vegetable oil.
Add the minced garlic and stir-fry until fragrant, about 30 seconds.
Add the amaranth leaves and stir-fry for 5-7 minutes until wilted and tender.
Season with salt to taste and stir well.
Serve hot as a side dish.
