Ingredients 

Main Ingredients

  • 1 medium Winter Melon peeled and cubed
  • ½ cup Barley rinsed
  • 6 cups Chicken Broth
  • 1 inch Ginger sliced
  • 2 cloves Garlic minced
  • to taste Salt
  • to taste Pepper

Instructions 

  1. 1. In a large pot, bring the chicken broth to a boil.
  2. 2. Add the barley and cook for 20 minutes.
  3. 3. Add the cubed winter melon, ginger, and garlic. Cook for another 20-25 minutes until the barley and winter melon are tender.
  4. 4. Season with salt and pepper to taste. Serve hot.
