Xinjiang Rice Pilaf / Polo Recipe (Shou Zhua Fan)

Main Ingredients
- 2 cups Basmati Rice rinsed
- 1 lb Lamb cut into chunks
- 2 medium Carrots julienned
- 1 large Onion sliced
- 4 cloves Garlic minced
- 1 teaspoon Cumin
- 1 teaspoon Coriander
- 1 teaspoon Salt to taste
- 2 cups Water
1. Heat oil in a large pot over medium heat.
2. Add lamb chunks and brown on all sides.
3. Add sliced onions and cook until translucent.
4. Stir in garlic, cumin, and coriander. Cook for another minute.
5. Add julienned carrots and cook for 5 minutes.
6. Add rinsed rice and stir to combine.
7. Pour in water and bring to a boil.
8. Reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked.
9. Fluff rice with a fork and serve hot.
